Yes so cool. I love the idea. It is a perfect vehicle for getting around selling a fun item.
There are even tuk tuks in the UK selling ice cream…those are pink.

We have them in the downtown area in the summer. They are highly regulated and they must pay for a spot to “park” and sell their products.
